Color in fruits aren’t related directly to vitamins, generally color is used to communicate when the fruit is ready to be eat.

Colours don’t impact vitamin levels, but sometimes they can signal the vitamins present. For example carrots, sweet potatoes and red and yellow peppers have high levels of beta-carotene which gives these foods their orange-like colour. Beta-carotene is used in our bodies to make vitamin A. It is true, green vegetables are full of loads of different vitamins and minerals and and thought to be good for us. If we eat a wide variety of different fruits and vegetables we should be able to get a lot of the vitamins and minerals we need.
